I will note that I'm running a 2-drive configuration on my Legends Ultimate & a 1-drive configuration on my Legends Gamer Mini (& my nephew's Gamer Pro), so I can see what would be reasonable in each perspective. This can limit the amount of re-work required. If you need more storage for CoinOpsX stuff OR want to break it among multiple drives, you can without affecting anything on the FlashDrive X drive & vice versa. With the 2-Drive method, while you're taking 2 USB ports, you can properly keep your FlashDriveX content & AddOn / CoinOpsX stuff separately. If you need more space on the FlashDrive X partition (because you skimped out on it earlier instead of giving it the maximum of 32 GB's), you'll have to rework the entire drive. you have to do the partitioning again & re-install everything on the FlashDrive X partition (as it's encrypted). HOWEVER, you have to partition the drive (which does take some work) & if you want to expand storage or replace the drive. With the 1-Drive method, you're only using a single USB port. While it practically comes down to personal preference, it's mostly boils down to convenience (having everything on one drive) vs flexibility (being able to swap drives easily).
